AN AUSSIE ICON ??

With Anzac Day only a hop, skip and a jump away it’s time to start whipping up some delicious Anzac biscuits ? Making these oat filled clusters of goodness is one of the traditions Australians follow for commemorating Anzac Day! And although I have ventured far from Australian borders I can’t help but fill my kitchen with the heavenly scent from baking your own Anzac bikkies ?

Traditional biscuits are often laddened with butter, refined sugars that come from lashings of golden syrup and brown sugar and processed white flour. I’m happy to announce that these biscuits are dairy free, wheat free, gluten free, egg free, vegan, and naturally sweetened ❀️

 

1/2 cup gluten free whole rolled oats
1/2 cup shredded coconut
1/4 cup raw almonds
2 tbsp 100% pure maple syrup
1 tbsp melted unrefined coconut oil
1 tbsp hot water
1 tsp baking powder
1/4 tsp cinnamon powder
Pinch Himalayan salt

Preheat oven to 180 degrees and line a tray with baking paper.
Place the first 3 ingredients into a food processor and just pulse so not to completely break the oats or nuts. The mixture is processed enough when the almonds are roughly chopped. Turn out into a bowl and stir in the remainder of ingredients. Take a spoonful of mixture and roll into a ball. Place balls on baking tray and flatten with the back of a spoon. Bake for 20-25 minutes or until golden on the edges.

 

Leave to cool then enjoy ?
